Stable in dry air, imppure and many natural products, can be oxidized by air and light, and its aqueous solution is quickly oxidized to dehydroascorbic acid. Alkali, iron and copper speed up the reaction. It can form a stable metal salt, which is a relatively strong reducing agent, and the color becomes darker and becomes light yellow in different degrees after storage.
