Proanthocyanidins have strong antioxidant activity, which is one of the strongest and most effective free radical scavengers found so far, especially its in vivo activity. The antioxidant activity of proanthocyanidins showed a dose-dependent relationship, but if the concentration of proanthocyanidins exceeded a certain concentration, its antioxidant activity would decrease with the increase of the concentration.
Antioxidation characteristics and mechanism: ① It can effectively scavengers superoxide anion free radicals and hydroxyl free radicals, and can also interrupt free radical chain reaction; ② It is involved in the metabolism of phospholipids and arachidonic acid and protein phosphorylation to protect lipids from oxidative damage; ③ It is a powerful metal chelator, which can chelate metal ions and form inert compounds in vivo; ④ protect and stabilize vitamin C, help vitamin C absorption.
