Physical properties
Shikimic acid is a fine white powder, which is easily soluble in water. The solubility in water is 18g/100ml, and it is difficult to dissolve in chloroform, benzene and petroleum ether. Melting point 185℃ ~ 191℃, optical rotation -180°, odor bitter acid.
