The main ingredients are capsaicin and capsaicubin, an orange-red viscous liquid, paste or powder with a chili odor, without spicy taste. Soluble in organic solvents such as oil and ethanol, orange red to orange-red after soluble in oil, insoluble in water. Emulsification and dispersibility, heat resistance, acid resistance are good, light resistance is slightly poor, stable to metal ions, strong coloring power. The maximum absorption wavelength in acetone is 470nm. Mice oral LD50 > 1.7g/kg, because it is extracted from red pepper, high safety.
