Description:
An antifungal polyene antibiotic that inhibits fungal growth by specifically binding ergosterol. Unlike nystatin and Philippinomycin, natamycin does not alter membrane permeability.
Physical shape:
Almost odorless and tasteless, can contain 3mol of water, more sensitive to oxidants and ultraviolet light.
Solubility:
Almost insoluble in water, higher alcohols, ethers, esters, slightly soluble in methanol, soluble in glacial acetic acid and xylene sulfoxide.
