Introduction
Mucins are glycoproteins rich in O-linked oligosaccharides secreted by epithelial mucosa, and their high viscosity gives them a protective function. The molecular weight of mucin secreted by bovine submandibular gland is 4-40×105Da. The molecule consists of a protein part (36.6%) and a carbohydrate part (56.7%).
Application
As a substrate for neuraminidase.
