Glucosinolates, also known as glucosinolates (GS), also known as (Z)-cis-N-hydroximinosulfateesters, are a class of plant secondary metabolites containing nitrogen and sulfur. Glucosinolates and myrosinase together constitute a special substrate-enzyme system in plants, namely glucosinolate-myrosinase system. This system is considered to be an important defense system in cruciferous plants. It plays an important role in plant defense against pathogen infection and animal and insect biting.
Glucosinolates can be catalyzed by myrosinase to produce glucose. Glucose is catalyzed by hexokinase ( HK ) to produce glucose-6-phosphate ( G-6-P ), and G-6-P is catalyzed by D-glucose-6-phosphate dehydrogenase ( G6PDH ) to produce glucose phosphate ( D-Gluconate-phosphate ), accompanied by NADP reduction to NADPH. Under the action of 1-mPMS, WST-1 can react with NADPH to produce water-soluble Formazan, which has a maximum absorption peak at 450 nm, according to which the content of glucosinolates can be calculated.
