Sweet, sweeter than lactose, but not as sweet as sucrose. Hydrolysis in acid yields galactose and fructose. It is soluble in water, slightly soluble in methanol, and almost insoluble in toluene. ; >86% at 90 ℃. It has variable rotation and is stable after 24 hours. Purpose: Scientific research, experiment.
