Determination of Significance:
Lactic acid is a kind of organic acid, which is made from corn starch by biological fermentation. It is a colorless clear viscous liquid, and the aqueous solution shows acid reaction. With water, ethanol or ether can be mixed arbitrarily, insoluble in chloroform. Because of its left-handed character, it has a good biological compatibility, can be fused with mammals, can directly participate in human metabolism, without any side effects, is widely used in food, medicine and other fields.
Measurement Principle:
Lactic acid has an absorption peak at 210 nm and can be determined by High-performance liquid chromatography.
