Product introduction
Effect of calcium ion concentration on enzyme activity: This product does not require high Ca2+, and 50-70ppm Ca2+ is sufficient. Extracted from Aspergillus oryzae. Under high temperature conditions, this enzyme can rapidly hydrolyze the refined α-1, 4 glucoside bond of starch molecules, and arbitrarily cut the starch molecules from the inside to grow short-bond dextrin and a small amount of oligosaccharides, so that the viscosity of starch pulp rapidly decreases. If the liquefaction time is prolonged, a small amount of glucose and maltose will be produced.
Scope of application
Biochemical research. Widely used in the industry of glucose, malt sugar, dextrin, fructose, oligosaccharides, alcohol, beer, monosodium glutamate, food brewing, organic acids, textile, printing and dyeing, paper making, other fermentation industry.
Unit definition
At 70℃ ,pH6.0, the amount of enzyme required for 1mg of soluble starch to become dextrin in 1 minute is 1 unit of enzyme activity
Optimum pH
6.0-6.5 (effective pH range is 5.5-8.0)
Optimum temperature
Above 90℃ (95-97℃ liquefaction is rapid, 100℃ still maintains considerable vitality, in the jet liquefaction, instant temperature can reach 105-110℃)
