Human serum albumin can transport fatty acids, bile pigments, amino acids, steroid hormones, metal ions and many therapeutic molecules, etc. It regulates the colloid osmotic pressure of the blood, and 16% nitrogen content is often used as the standard for protein content measurement. The free hydrophobic zone allows fatty acid-free albumin to be used for lipid solubilization in tissue cell culture. Due to their free hydrophobic region fatty acid free albumins are used to solubilize lipids in tissue culture, and are also used as blocking agents in Western blots or ELISA applications.
